Alcohol severely dehydrates you, and therefore concentrates the electrolytes in your body. Because of the lack of water, your brain shrinks slightly away from your skull which is the probable cause of a headache.

Alcohol also causes a state of hypoclycemia (low blood sugar) which has side effects similar to diabetes (I know diabetics have high blood sugar, but that is because they don't have enough insulin to convert it to glycogen. Either way- not enough glycogen is being stored.) This is why you can feel sick as well as tired during your hangover.

Dainslaif- good call on the starchy foods. Starch= instantly raised blood sugar levels.
