Coolant Message Appearing

i tried looking this up on the forums, but all the answers seem to either float off track or confuse me more...

my coolant light went off last week, i checked the manual, got the name brand coolant it asked for, waited over night for it to cool, measured out 50/50, and checked the coolant.

it was a little (and i mean a LITTLE) below the cold fill line, so i added a bit more to get it at the line (and a little above) and then ran the engine for a while until the hose got hot to check the level and make sure it stayed above the fill line.

when it got warm it went a good bit above (like the manual said it would) and then i closed it up tight and shut the car down and went in to enjoy Thanksgiving day.

next day...

driving for abotu 45 mins to an hour and the coolant message showed up again. pulled over, checked the coolant, still at the level it was the day before. checked under for leaks, none.

started driving. i purposly took a very long route to see what the heat lvl on the car was doing and the gauge stayed at lower then half way. so i am not over heating.

next day, after driving an hour to work and about 3/4's of the way home (almost 2 hours of driving with a 9 hour stop in the middle) it came on again.

once again, the level hasnt changed at all in the reservoir and the heat never goes above mid point.

Could this be a sensor issue?
