So my son thought it would be a good idea to spill his bowl of cereal all over the floor in the backseat. Unfortunately I couldn't clean it 100% right away and now I can't get the smell out. Also the carpet is now crunchy-esque

Someone recommended using fast orange, a scrub brush, and a hose to try and clean it. Am I just better off buying new carpet? And if yes, do I need to buy the insulation and everything underneath or just the carpet?

Upholstery can get pretty expensive fast. I would try to shampoo it out and if that doesn't work then a professional car detailer might be able to save it. After that new carpet would be the way to go.

I'd just find a carpet cleaner with the wand attachment. Should clean it up well enough.

We have a carpet cleaner too.

I use a wet and dry vacuum to extract the spillage. I use a soft bristle brush attached to a drill then spray with apc.

Done this when my 1-year-old niece throws up at the back seat. Work wonders lol.
